Types & Grades

Black pepper is graded based on berry size, density, and piperine content:

Malabar Garbled (MG-1)

Premium grade with 99% pure berries, minimal broken pieces. Uniform size and highest pungency.

Tellicherry Garbled Extra Bold (TGEB)

The largest berries (4.75mm+), considered the world's finest pepper. Exceptional flavor profile.

Tellicherry Garbled (TG)

Large berries (4.25mm+) with excellent aroma. Preferred by gourmet chefs worldwide.

Malabar Ungarbled (MUG)

Natural grade with some light berries included. Good value for everyday cooking.

How to Identify Quality

Density: Quality pepper sinks in water. Light or floating berries indicate poor quality or hollow cores.
Wrinkles: Deep, prominent wrinkles indicate proper sun-drying. Smooth berries may be under-ripe or chemically treated.
Color: Uniform dark brown to black color. Grey spots indicate mold or moisture damage.
Aroma: Crush a few berries - should release sharp, pungent, slightly woody fragrance.
