Origin & Sourcing

Our authentic Ceylon Cinnamon (True Cinnamon) is sourced from the spice gardens of South Kerala. Unlike common Cassia cinnamon, Ceylon cinnamon has a delicate, sweet flavor and is considered the "true" cinnamon. We work directly with farmers who practice traditional harvesting methods.

Types & Grades

Ceylon cinnamon is graded based on quill thickness, color, and aroma intensity:

Alba Grade

The finest grade with paper-thin quills (less than 6mm diameter). Light tan color with delicate flavor.

Continental Grade (C-5 Special)

Thin quills about 16mm diameter. Excellent aroma and widely preferred quality.

Mexican Grade (M-5)

Medium thickness quills with robust flavor. Great for cooking and beverages.

Hamburg Grade (H-1, H-2)

Thicker quills ideal for grinding into powder. Good value for bulk use.

How to Identify Quality

Texture: Ceylon cinnamon quills are soft, thin, and can be easily crumbled by hand. Cassia is hard and thick.
Color: Look for light tan to medium brown color. Very dark brown indicates Cassia, not true Ceylon.
Layers: Ceylon cinnamon has multiple thin layers rolled together like a cigar. Cassia has one thick layer.
Aroma: Sweet, delicate fragrance with subtle notes. Cassia has a stronger, more pungent smell.
