How to Identify Quality

Color: Should be uniform greenish-brown. Very dark or light seeds indicate age or adulteration.
Aroma: Rub seeds between palms - should release strong, warm, earthy fragrance immediately.
Shape: Seeds should be boat-shaped with visible ridges. Broken or powdery seeds are lower quality.
Taste: Slightly bitter, nutty flavor when chewed. Very bitter taste may indicate nigella/kalonji adulteration.
